How to cook...

  1. Preheat your oven to 160°C (140°C fan)/Gas Mark 3.
  2. Heat a little oil in a large frying pan over medium-high heat. Add the lamb shanks and cook until browned on all sides, turning occasionally.
  3. Transfer the lamb shanks to a large casserole dish.
  4. In the same frying pan, add chopped onions, carrots, and celery and cook for 5 minutes until softened.
  5. Add minced garlic and cook for another minute.
  6. Pour in red wine and beef stock and bring to a boil, stirring to scrape up any browned bits on the bottom of the pan.
  7. Add chopped tomatoes, tomato paste, thyme, rosemary, and bay leaves to the pan, and season with salt and pepper.
  8. Pour the sauce over the lamb shanks in the casserole dish, making sure they are fully covered.
  9. Cover the dish with a lid or tightly with foil, and bake in the oven for 2-3 hours, or until the lamb shanks are tender and falling off the bone.
  10. Once cooked, remove the lamb shanks from the casserole dish and keep them warm.
  11. Skim off any excess fat from the sauce and strain the sauce through a fine mesh sieve, discarding any solids.
  12. Serve the lamb shanks with the sauce and your choice of side dishes. Enjoy!

The Herdwicks are farmed by Will Benson who ensures the highest standards of animal welfare.

Rather than Lamb, we stock Hogget – since Herdwicks take longer to mature than other breeds of sheep, it takes just a little longer for the sheep to get to the perfect taste. It also gives them longer to enjoy running around on the fells.
