Quality: When sourcing coffee, we are always looking for incredible cup quality. That doesn’t mean we are always looking for 90+ scoring fruit-bombs, but the coffee must be grown and processed with care, and be clean and expressive in the cup. For us, a well-sorted and beautifully balanced 86 point washed community lot has as much merit as a 90 point anaerobically fermented single-farmer micro-lot bursting with tropical fruit flavour. Traceability: We like to know exactly where our coffee comes from, and to share as much information with you as possible. If it is from a single farm or estate, we want to be able to pinpoint this on the map. We want to tell you the story of the farm and its owners, what ethos drives them, and how the farm is managed. If a community lot, we want assurances that the cooperatives or washing stations that represent them and process their coffees are operating with the prosperity of their members and contributors as their primary motivation. Sustainability: This overarching principle applies to every aspect of what we do. At a farm level, we like to support producers that implement sustainable agricultural practices that respect and regenerate the land that they farm. We like to work with cooperatives, exporters, and importers that have an interest in the long-term wellbeing of the farmers and communities that they buy from, through payment of fair prices, and facilitating improvements to living standards and agricultural practices. “Each coffee that we source has its own unique characteristics that are determined by its variety, the conditions in which it is grown, how it is processed, and how it is transported to us. Using a combination of experience, experimentation and analysis, we aim to unlock these characteristics, and to give them their truest expression in the cup.
We are proud to roast all of our coffees on a Loring S15 Falcon, the most environmentally friendly roaster in its class. Unlike a conventional drum roaster that uses a heating element to warm the rotating drum in which the coffee is roasted, the Loring uses hot air to roast the coffee.
The air is heated by a single burner in a separate cyclone. The hot air passes through a particle filter, then into the static drum where it heats the coffee, before exiting the drum and being routed back to the cyclone. Here the air is reheated and any smoke is incinerated, before being routed back through the filter and into the drum for another cycle.
The result is a smokeless roaster with very low emissions and gas consumption relative to other roasters in its class. The incineration of smoke and subsequent filtration of the air also results in a very clean roasting environment. We believe this results in a cleaner, more expressive, and ultimately more delicious cup of cup of coffee.”
