Unsurprisingly Winter Tarn Dairy’s salted and unsalted 200g butter rolls are made with great care and attention to detail in small batches using only the finest, fresh local dairy cream.

Provenance and sustainability have always been part and parcel of Winter Tarn’s ethos. As a result, they only use cream from grass fed cattle, collaborating exclusively with a number of small herd dairy farms in the Northwest of England, which in turn ensures that these farms obtain a fair price for their milk, enabling them to continue to farm in the way that they would want.

About Wintertarn Diary...

“Our butter making is something of an art form which has been carefully researched to ensure we utilise as many traditional processes as possible to craft a truly handmade product with provenance and authenticity at its heart.

Once the cream arrives at the Dairy, we begin the process of crafting our artisan made small batch butters.

The process begins with the ripening and aging of the cream, before it’s carefully crystalised to make sure that each batch delivers the very best quality butter.

After which the cream is gently warmed, this creates a much lower moisture level and far higher fat content in the cream. Once the cream reaches the correct temperature it is then very slowly churned in small batches of around 100 litres at a time.

During this process the cream begins to crystalise or ‘crumb’, at this stage the buttermilk is rinsed off until the water runs clear.

The resulting ‘crumb’ is then salted (or not) to enhance the flavour and help preserve the butter, once salted it is churned again to remove any excess water.

Once the butter has been fully brought together it is then moulded, packed, and labelled by hand.

This detailed process means that we can control the butter making process at every stage and ensure that we make only the finest quality butter – made in the traditional farmhouse way, which in our view is exactly how butter should be made.”
