How to cook...

  1. Preheat the oven to 200°C (180°C fan)/400°F/gas mark 6.
  2. Heat the olive oil in an oven-proof frying pan over medium-high heat.
  3. Season the chops with salt and pepper on both sides.
  4. Place the chops in the frying pan and cook for 3-4 minutes on each side until browned.
  5. Transfer the frying pan to the preheated oven and cook for an additional 6-8 minutes or until the internal temperature of the chops reaches 145°F (63°C) for medium-rare.
  6. Remove from the oven and let the chops rest for a few minutes before serving.

This is why all of our Hogget (more mature lamb) comes from Town Head Farm, the farm is a late 17th century working hill farm located just outside of Grasmere, with the Herdwick Sheep grazing Helm Crag and Steel Fell in the Lake District. The Herdwicks are farmed by Will Benson who ensures the highest standards of animal welfare.

Rather than Lamb, we stock Hogget – since Herdwicks take longer to mature than other breeds of sheep, it takes just a little longer for the sheep to get to the perfect taste. It also gives them longer to enjoy running around on the fells.
