How to cook...

  1. Heat a little oil in a large pan or casserole dish and brown the lamb pieces on all sides.
  2. Remove the lamb from the pan and set aside.
  3. Add some diced onion and garlic to the pan and cook until softened.
  4. Return the lamb to the pan and add enough liquid (such as stock or wine) to almost cover the meat.
  5. Bring the liquid to a simmer, then reduce the heat and cover the pan.
  6. Let the lamb simmer for 1-2 hours, stirring occasionally, until the meat is tender and falling apart.
  7. Season with salt and pepper to taste.

This lamb can be used in a variety of dishes such as stews, curries, or pies. Enjoy!

This is why all of our Hogget (more mature lamb) comes from Town Head Farm, the farm is a late 17th-century working hill farm located just outside of Grasmere, with the Herdwick Sheep grazing Helm Crag and Steel Fell in the Lake District. The Herdwicks are farmed by Will Benson who ensures the highest standards of animal welfare.

Rather than Lamb, we stock Hogget – since Herdwicks take longer to mature than other breeds of sheep, it takes just a little longer for the sheep to get to the perfect taste. It also gives them longer to enjoy running around on the fells.
